Ingredients: (2 servings/4 – 6 skewers)
- 2 x 200g skinless, boneless chicken breast cut into approx. 1.5 inch cubes
- 50ml rice wine or dry/medium sherry
- 50ml soy sauce
- 1 teaspoon sesame oil
- 1 large red bell pepper, cut into 8 pieces
- 1 large green bell pepper, cut into 8 pieces
- 8-10 cherry tomatoes
- 1 red or white onion cut into 8 pieces
- 1 tablespoon sesame seeds, toasted
Method: (can be cooked on grill in kitchen or used for a barbecue)
- Combine rice wine, soy sauce and sesame oil in a large bowl
- Add chicken to bowl, and toss to coat. Marinate for about 15-30 minutes
- If using a grill heat to medium high heat
- Remove chicken from marinade and leave to one side
- Place remainder of marinade in small pan and bring to a boil
- Reduce until thick and leave to one side
- Assemble your skewers using alternating pieces of chicken and veg
- Brush skewers with reduced marinade
- Cook under grill for about 10 minutes turning and basting frequently with marinade
- Remove skewers and sprinkle with toasted sesame seeds
- Serve with rice if on a carb day or on a bed of cauliflower rice/cous cous
