Roasted Vegetables

Ingredients: (approx. 2 servings)


- 1 medium red onion


- 12 cherry tomatoes


- 1 small red or yellow pepper


- 1 medium courgette/zucchini


- 1 medium carrot


- 2 teaspoons olive oil


- Black pepper


Method:



    • Heat oven to 220 degrees of gas mark 6

    • Cut all your veg except tomatoes into bite size pieces

    • Place all veg including tomatoes into a bowl and add black pepper and olive oil

    • Mix thoroughly

    • Place all your veg on a roasting try/tin making sure you only have one layer.

    • Place tray in middle of oven and cook for 20-30 minutes
