Ingredients: (2-3 servings)
- 400g lean ground/minced turkey
- 1 tsp coconut oil
- 1 tsp cumin
- 1 tsp salt
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp oregano
- 1-2 cloves of garlic (to taste)
- 1/2 medium onion
- ½ red pepper
- 120g ripe tomatoes
- 4-6 large lettuce leaves (romaine works or butter lettuce)
- (optional – for a cheat meal) 30g shredded cheddar cheese
Method:
- Chop finely the onion, pepper, garlic and tomatoes or put them all in food processor for about 20 seconds
- Heat a large pan with teaspoon of coconut oil
- Add turkey and cook until all pink gone, breaking up the pieces as it cooks.
- Add cumin, paprika, oregano, chilli powder, salt and mix well.
- Add the chopped onion, garlic, pepper, and tomatoes, and cover. Simmer on low for about 15-20 minutes.
- Remove cover and cook for a further 5 minutes to boil down some of the liquid.
- Take off heat and leave to cool for a few minutes, and drain off remaining liquid, before putting onto lettuce leaves
- Sprinkle with cheese if using
