I posted a photo of these on Twitter and FaceBook, along with some beef kebabs I made at a recent barbecue for friends so thought I would share the recipe. I have used a couple of times this summer already. I have to give some credit to Jamie Oliver as I was inspired by one of his recipes. You will need either disposable wooden skewers or metal skewers. Ingredients: (Makes 10-15 kebabs):
- 1Kg skinless chicken breast
- 12-15 sweet cherry tomatoes
- 1 red pepper (cut into 1"/2.5cm square pieces)
- 1 green pepper (cut into 1"/2.5cm square pieces)
- 12-15 button mushrooms
- 2 medium onions (red or white as preferred)
- cut into 1/8ths depending on size
For the marinade:
- 5 cloves garlic, crushed/chopped finely
- 2 handfuls chopped fresh coriander
- 2 handfuls chopped fresh mint (or parsley if preferred)
- juice of one lemon
- about 10 spring onions, finely chopped
- 2 fresh red chilis chopped (or to taste)
- freshly ground pepper to taste
- sea salt to taste
Method:
- - Cut chicken breasts into about 1"/2.5cm chunks (or bigger if preferred)
- - Mix all marinade ingredients except olive oil (either all finely chopped together or using a mixer)
- - Add olive oil as needed to make a good paste
- - Place chicken chunks in a shallow dish with marinade making sure its all well mixed together.
- - Cover and leave in fridge for a few hours
- - Prepare for the barbecue by placing 4-5 chunks of chicken on skewer, alternated with tomatoes, onion, mushroom and peppers
- - Fire up the barbecue and when hot, cook for 10-15 minutes. turning regularly.
