Tuna Nicoise Salad


Ingredients: (2 servings)

  • 100g green beans, cooked briefly in boiling water (blanched) and then cut in half
  • 2 little gem lettuce, washed and cut into bite size pieces
  • 100g cherry tomatoes, halved
  • 1/3 cucumber diced
  • 2 tins of tuna¬†
  • 2 hard boiled eggs
  • 10 pitted black olives
Method:
  1. Prepare vegetables and salad ingredients
  2. Cut each boiled egg into about 4 portions
  3. Remove tuna from tins and divide into bite size chunks
  4. Arrange salad ingredients in shallow bowl
Sprinkle with 2 teaspoons of favourite salad dressing if needed
