Ingredients: (2 servings)
- 100g green beans, cooked briefly in boiling water (blanched) and then cut in half
- 2 little gem lettuce, washed and cut into bite size pieces
- 100g cherry tomatoes, halved
- 1/3 cucumber diced
- 2 tins of tuna
- 2 hard boiled eggs
- 10 pitted black olives
- Prepare vegetables and salad ingredients
- Cut each boiled egg into about 4 portions
- Remove tuna from tins and divide into bite size chunks
- Arrange salad ingredients in shallow bowl
