Ingredients: (For about 4 servings)
- 5 large ripe tomatoes (e.g. on the vine, not beefsteak)
- ½ to 1 Cucumber
- 1 bunch Spring (green) Onions
- 1 Red pepper
- 1 Green pepper
- 1 Yellow pepper
- 2 Garlic cloves
Seasoning:
- 1 tspn smoked paprika
- 1 tspn chilli pepper
- Fresh black pepper and salt to taste
- 1 tablespoon olive oil
- Other optional/alternative seasoning depending on preference
- Fresh basil, mint OR coriander
Method:
- You can peel the tomatoes by plunging into boiling hot water but not necessarily needed if using good tomatoes
- Roughly chop all vegetable ingredients and blend in food processor (Consistency is optional – you can leave it fairly chunky or have smooth)#
- Add seasoning to taste at the end until you have the flavour you like
- Chill in fridge or if you don’t have time add ice cubes to chill quickly
