Ingredients: (2 servings)
- 400g sirloin or rump steak
- 4 teaspoons of hoisin sauce
- 2 tablespoons of fresh coriander (cilantro) chopped
- 2 tablespoons of smooth peanut butter
- 2 tablespoons of coconut milk
- 1 teaspoon of fresh lime juice
- ½ teaspoon of red curry paste
Method:
- Pre-heat grill to high heat
- Cut steak diagonally into strips (about ½ to 1cm thick)
- Mix steak strips with hoisin sauce and leave for 5 minutes
- Thread steak onto wooden skewers (about 8-10)
- Place on grill tray and cook about 3-4 minutes each side.
- Sprinkle skewers with the chopped cilantro (coriander)
- To make the peanut sauce:
- Combine coconut milk, peanut butter, lime juice and curry paste into a bowl. Mix until smooth and serve with skewers and brown rice. Go easy on the peanut sauce otherwise easy to go over daily fats allowance
