Sesame Chicken with Apricots and Sugar Snap Peas

Another super quick one and the dried apricots add loads of Vitamin A (for growth, development and maintaining immune system and vision) and are also a good source of fibre.

Ingredients: (2 servings)


- 2 skinless, boneless chicken breasts (about 150g each) cut into thin strips/slices


- 2 teaspoons sesame oil


- 3-4 fl ozs water


- 1 dessert spoon sesame seeds


- 1 garlic clove, finely chopped or crushed


- 1 1/2 ozs sliced dried apricots


- 1 dessert spoon soy sauce


- 1 dessert spoon Dijon mustard


- 1/2 teaspoon finely chopped fresh ginger


- 125g sugar snap peas


Method:




    • - Heat oil in a non-stick pan and add garlic, cooking for a minute over a medium heat

    • - Add the chicken and saute until lightly browned, about 5 minutes

    • - Add sesame seeds and continue to saute over medium heat for another couple of minutes

    • - Add the rest of the ingredients - water, apricots, peas, soy sauce, mustard and ginger

    • - Bring to the boil, lower the heat and simmer for about 5 minutes stirring occasionally

    • - Serve with your favourite carbs! (or not if you are on a low carb day)
