Oriental Chicken Skewers

Ingredients: (2 servings/4 – 6 skewers)


- 2 x 200g skinless, boneless chicken breast cut into approx. 1.5 inch cubes


- 50ml rice wine or dry/medium sherry


- 50ml soy sauce


- 1 teaspoon sesame oil


- 1 large red bell pepper, cut into 8 pieces


- 1 large green bell pepper, cut into 8 pieces


- 8-10 cherry tomatoes


- 1 red or white onion cut into 8 pieces


- 1 tablespoon sesame seeds, toasted


Method: (can be cooked on grill in kitchen or used for a barbecue)



    • Combine rice wine, soy sauce and sesame oil in a  large bowl

    • Add chicken to bowl, and toss to coat. Marinate for about 15-30 minutes

    • If using a grill heat to medium high heat

    • Remove chicken from marinade and leave to one side

    • Place remainder of marinade in small pan and bring to a boil

    • Reduce until thick and  leave to one side

    • Assemble your skewers using alternating pieces of chicken and veg

    • Brush skewers with reduced marinade

    • Cook under grill for about 10 minutes turning and basting frequently with marinade

    • Remove skewers and sprinkle with toasted sesame seeds

    • Serve with rice if on a carb day or on a bed of cauliflower rice/cous cous
