Marinated Grilled Chicken

Its a good idea to put the chicken in the marinade in advance and then leave it in the fridge for a few hours to make the chicken really tender. Once marinade is made, actual cooking time is about 15 mins. 4 servings.

Ingredients:

- 4 chicken breasts (about 150g each)

- 1 tablespoon olive oil

- 2 tablespoons soy sauce (low salt)

- 2 slices of fresh, ripe cut pineapple

- 2 large ripe tomatoes, chopped

- 1/2 tablespoon tomato puree/paste

- 2-3cm fresh ginger root, grated

- 2 garlic cloves, crushed

- freshly ground black pepper

Method:

Marinade
  • - In a bowl big enough for all the chicken breasts, cut up the pineapple slices and mash with fork
  • - Add chopped tomatoes, tomato puree/paste, olive oil, soy sauce, crushed garlic, grated ginger and black pepper
  • - Mix all the ingredients making sure the pineapple is well broken down
  • - Add the chicken breasts and make sure they are covered in the marinade
  • - Place in fridge for a couple of hours or more

Cooking

 

  • - Turn grill on, and allow to heat up to high heat
  • - Remove chicken from marinade and place on grill rack
  • - Spoon some of the marinade over the chicken
  • - Cook for about 6-8 minutes each side depending on thickness of the chicken
  • - Spoon more marinade on when you turn the chicken over
  • - Serve with favourite veg - wholegrain pasta, broccoli and carrots in photo below
